We developed a simple and convenient analytical device for glutamate in food, based on the technologies for creating high-performance enzymes and measuring water quality easily on site. Sudachi citrus is one of the symbolic agricultural products of Tokushima Prefecture, Japan. The amount of sudachi citrus peel waste generated during the production of sudachi juice is 800 tons per year. Tokushima Prefecture and Tokushima University have found the anti-diabetic effect of sudachitin contained in sudachi citrus peel waste. With this unused resource, we have developed up-cycle products through industry-government-academia collaboration. We will introduce in our presentation these products as well as our activities that contribute to the SDGs.
