Functional foods that provide new food value will be exhibited, including “LP-V,” which uses lettuce, an unused resource, to improve the texture of bread and sweets “Taffy®,” a modifier that improves the firmness of noodles and inhibits elongation in hot water and “Hokkaido White Grape Peel Powder,” an upcycling material with skin beautifying effects. In addition, emulsified products for sauces and coating technology to protect probiotics will also be introduced.

Title Introducing functional food ingredients using lutein for wheat flour products
Detail "LP-V" is an environmentally-friendly product. It can contribute to upcycling because it contains dried and powdered lettuce usually discarded in plant factories. By using this "LP-V" 0.3%~1.0% against flour, due to the action of lutein in lettuce, you will improve physical properties and texture of bread dough. Effective in small amount, it is also friendly to your work efficiency and storage space.
