Title Prediction of sensory evaluation score by measurement data related to taste, texture and color
Detail In recent years, there has been a demand for predicting sensory evaluation scores for applications in quality control and the development of new products.
In this presentation, we introduce an example of building a prediction formula using sensory evaluation scores, instrumental analysis related to taste, texture, and color, and regression analysis using measured data of component analysis of chocolate.

Title Support customer notification with analytical tests! Overview of Foods with Function Claims and JFRL’s Initiatives
Detail There are various functional substances involved in Foods with function claims(FFC), and accuration of the measurement is necessary. Recently, there has been an increase in the number of cases in which the validity of analytical methods is required. Also, the type of analysis method to be used is critical. In this presentation, we will introduce necessary tests and points to note when submitting the product to FFC, from the perspective of instrumental analysis.

Title Establishment of Fatigue Evaluation Model Using Human Cultured Cells
Detail Fatigue is considered to be one of the risk factors for depression and cerebrovascular damage.
In fatigue research, a method using an animal model is generally used, however from the animal protection point of view, an alternative method without using an animal is required. This presentation aims at the construction of fatigue evaluation models using cultured cells, and we will introduce studies using fatigue model mice and cultured cells.

Title Japanese Official Methods and Overseas Test Methods for Food Microbiology Testing
Detail With the recent internatio​nalization​ of food distribution and the diversification of foods, there is a need for internationally acknowledged test results. However, the Japanese official methods and overseas testing method for food microbial testing is different. Therefore, we would like to show the details of the Japanese Food Sanitation Law, the differences between the Japanese official method and overseas test methods, and also how to read the results.
