| Detail | As an example of metabolite analysis, we attempted to visualize "deliciousness" by evaluating quantitative changes in molecules during the food aging process. Focusing on the prized *kue* (longtooth grouper), we analyzed metabolic molecules throughout the aging period and evaluated the relationship between the degree of aging and the time-course changes in the quantities of these molecules. This presentation reports on the results of that study. | ||
